Freshly-cooked chickens are prepared in small batches throughout the day by their well-trained cooks. The raw chicken pieces are hand-battered and breaded using a special batter mix.


RIGHT TEMPERATURE, RIGHT TASTE

To ensure that Texas chickens are prepared to perfection and served hot, they are cooked to a minimum internal temperature of 185 degrees Fahrenheit and are kept for no longer than 45 minutes at a minimum temperature of 145°F.
