“Good
morning Sir, I am coming to your house to give you some pineapple tarts.”
Martin Theseira message me at 8:33 am on Thursday 21 September 2023. I was walking
towards Praya Lane from Ah Chew Coffee Shop and did not hear the notification
sound. By 9:05 am, the first photograph captured is Bernard Sta Maria’s

“I am at
your house” Martin Theseira message again at 9:25 am. Knowing that his message
was not read, Martin Theseira made a whatsapp audio call to me to find out
whereabouts am I. Martin Theseira’s car rumbles from rear of the Kissing Lane through high walls on both
sides.
“Pineapple tarts for you” and he drove away to shop for groceries with his sister.
What I
first love most about the pineapple tarts is who I share it with. Before doing
anything else, I shared the below photograph with Siu Siu, my wife.
Eager or
strongly wanting to know whether the tarts taste as good as it looks, my eyes
signal waiting motor neuron with an automatic command to gesticulate my left hand and seize a piece of the tart to be held
gently between the index finger and the thumb.
Wait!
Yes,
reading improves imagination and you may think the piece of tart is already in
my mouth. Stop here for a moment!
Around eye
level, that piece of Martin Theseira’s tart went through a visual-tactile
characteristics profiling for color and friability.
Its sturdy contours…
Unforceful
incisors cut the crispy and crunchy crust with a slow-mo and wedges through the
inner fluffiness giving each bite so delicious. And there was no broken up
pieces dropping on the table with my experiences on certain biscuits. I have
only bite on the baked dough on the edges of the tart.
Grinding
the baked pineapple paste between the tongue and the palate is a must to
determine if a pineapple tart is well done.
The taste
of bromelain is undamaged in the balanced seasoning of the pineapple paste
furthered proven by the heat of baking.
Pineapples
is considered a symbol of hospitality, welcome and good luck and when baked as tarts
its radiant golden crown of the pineapple paste sits on crispy fluffy tender
plate-like dough is auspicious to all new beginnings.
